Many canned soups are very high in sodium. The can of Chicken Tortilla Soup that I used for comparison to a homemade version had about 1320mg sodium in a can. (Who ever eats only half a can of soup?) A popular brand of Chicken Tortilla Soup is one of my spouse’s favorite. Creating a homemade version to compare presented a great opportunity to duplicate this soup. The main ingredients are: chicken broth, tomatoes, cooked chicken meat, onions, red bell peppers, green sweet peppers and corn. Black beans were listed in the “contains less than 2% of” list. Also in this list was toasted corn flour, which I figured must be help to give it that “tortilla” flavor.
