CLASSIC SPINACH SALAD

A favorite classic spinach salad is made with a warm bacon dressing. Bacon is cooked and used in the salad and the bacon fat in the dressing. I am not saying it doesn’t taste good but, yikes, the saturated fat is crazy high. I prefer to make mine using turkey bacon in the salad and a reduced fat mayo based dressing. Sure, the turkey bacon is a processed meat and not what I would consider “healthy” but it less evil, in my opinion, than using regular bacon that is processed AND high in saturated fat. In the end, it’s all about balance.

Ingredients

Spinach Salad Dressing

  • 1/2 cup reduced fat mayonnaise
  • 1 tbsp white wine vinegar
  • 1/2 tsp sugar
  • 1 tsp Dijon mustard

Salad

  • 8 cups baby spinach, packed
  • cups thinly sliced crimini or button mushrooms
  • 6 slices turkey bacon, chopped and cooked
  • 2 hard boiled eggs, peeled and sliced
  • 1/2 red onion, thinly sliced

Instructions

  1. In a medium bowl, add dressing ingredients and stir well. Set aside.
  2. In a large bowl, add spinach and toss with dressing adding a little at time until lightly coated. Add the remaining ingredients and gently toss a couple times. Serve immediately.
